Miguel Sanchez Romera Miguel Sanchez Romera has been a neurologist for 20 years. He specialises in clinical neurophysiology. He has been chef and owner for 10 years of the L’Esguard restaurant at Sant Andreu Llavaneres (Barcelona), a world where science, figurative arts and different cultures meet. Since 1998 he has been professor of science and culinary technique at Vic University, Barcelona. He has written La cocina de los sentidos (La cucina dei sensi, Planeta, 2001) and Total Cooking 1 (Akal, 2006).
