Community in the kitchen

The kitchen as a community is a place where flavors, ingredients and stories meet, where identities and backgrounds mix and contaminate each other, because a pot and stove contain material goods, but often also culture. The teams found in kitchens are increasingly international and interethnic, a bit like what happens with orchestras. And, as Gualtiero Marchesi said, when we play music we interpret a score. Food communities can be made up of producers as well as cooks. Generally, the former depend on the latter, but lately the opposite has also been occurring. Finally, by its very definition, the kitchen produces yet another meeting point: the one that forms around dishes and the table. Here, community takes on the form of conviviality, allowing opportunities for communion that are impossible elsewhere.

Philippe Léveillé (Nantes, 1963) attended the Saumur vocational institute before embarking on a series of pilgrimages around the world. Today his restaurant Miramonti l’Altro in Concesio (BS) has two Michelin stars. He is known to the general public for his television appearances, including as guest judge on the third season of Masterchef and in the 2015 edition of Pechino Express alongside Ciccio Sultano.

Marco Bolasco, nato a Roma nel 1973, è giornalista enogastronomico e vive fra Roma e Firenze. A partire dal 1997 lavora con Stefano Bonilli nel Gambero Rosso, prima alla redazione di Rai Sat Gambero Rosso Channel e poi come curatore della Guida Ristoranti d’Italia, dal 2006 al 2009. Dal 2009 al 2014 è direttore editoriale e poi amministratore delegato di Slow Food Editore. Oggi è direttore della divisione «Varia e illustrati» di Giunti, del sito piattoforte.it e della guida Osterie d’Italia.
